The game has to be baseball, which was constantly referenced by the baseball on Sisko's desk. On top of that, in the final season of DS9, there was an episode called "Take Me Out to the Holosuite" where the senior staff was pitted against the crew of the USS T'Kumbra for a baseball game.
If I remember right, his primary favorite team is the London Kings, because one of his all-time favorite players is Buck Bokai. I do believe that he also took an interest in the Pike City Pioneers on Cestus 3, in part because Cassidy Yates' brother is on that team.
